The Saga of the 37 Pumpkins - Installment No. 20 - Pumpkin Frozen Yogurt

"I asked you a question," the young man reminded Patch, with yet another smile.

"Is it beautiful?" Patch repeated, "No. Not really. I've seen better."

"I think it's just the most splendid thing. Don't you?" he looked at Patch excitedly.

Patch shook his head and looked up at the sky and the sun, if you could call them that.

"Oh, I'm sorry," the fellow smacked himself with his stalk, "You haven't evolved yet. When I saw you here, I assumed that you had. "

"What?" Patch frowned. The man had turned around and was presently sliding away. Overcome by curiosity, Patch started after him. "What do you mean?"

"You'll understand when you evolve, my poor boy! Now say goodbye!" Patch's companion was standing still and looking upwards. A slight breeze rushed across Patch's skin. A sound almost like thunder came closer and closer, until at last a keeper was within inches from the young man. Now he was plucked up and raised into the air.

He began singing loudly, shouting out declarations of praise and jubilation. Patch could detect a faint, low rumble that came and went in spurts. He wondered if the keeper was talking. Before Patch could contemplate this possibility, the keeper was gone. So was the strange man he'd just met.

Pumpkin Frozen Yogurt

Ingredients: 
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 1/4 cup milk
  • 1/4 cup butter (This is optional. We added it to compensate for richness lost by using lowfat yogurt rather than yogurt made with whole milk.)
  • 1 tbsp imitation rum
  • 1 tsp vanilla extract
  • 2 cups of plain yogurt
  • 1 cup pureed pumpkin
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger

Instructions:

In a small bowl, combine the sugars, milk, vanilla, imitation rum, and butter if you want it. Microwave until syrupy.
Dump the pumpkin and yogurt into a blender and blend until smooth. Add the sugar mixture and spices, then blend all ingredients together. Once smooth, pour the mixture into a plastic lidded container and freeze, stirring every hour or so.

This frozen yogurt is particularly tasty with some toasted walnuts sprinkled on top to balance the slightly tangy flavor from the yogurt.
