The Goodness of Potatoes - Potato and Broccoli Soup


If you're thinking potatoes are a worthless, fattening, starchy vegetable, think again.

High in vitamins and minerals, this family-favorite vegetable is good for you. A medium -sized potato with skin provides 45% of your daily requirement of vitamin C and also provides your body with much needed potassium, more than 1 whole banana. It's high in fiber too! A potato with skin has as much fiber as whole grain breads, cereals, and pastas.

Potatoes, best known for their energy producing carbohydrates in the form of starch, provide fiber-like health benefits to the body. During digestion, a small but significant amount of starch makes its way into the large intestine where it provides bulk, protects the colon, and may also act to reduce fat storage.

There are countless ways to enjoy the healthful potato and this creamy potato and broccoli soup is one of them. It's quick and easy and makes a hearty lunch or dinnertime meal.




Creamy Potato and Broccoli Soup


Ingredients:
  • 2 to 3 medium-sized potatoes, peeled and cubed
  • Broccoli flowerets
  • 1 small onion, chopped
  • 1 rib celery, chopped 
  • 1 clove garlic, minced
  • 2 chicken bouillon cubes
  • 1 cup water
  • 1/2 cup milk
  • 1/4 cup sharp cheddar cheese

Instructions:

Chop vegetables.

Boil water and add potatoes to pot. Boil for approximately 20 minutes.

While potatoes are boiling, add onion, celery, garlic, and bouillon cubes to pot.

When soft, reduce heat and lightly mash potatoes.

Add milk and broccoli. Cook an additional 5 minutes.

Stir in cheese and simmer for a few minutes to blend flavors.

A dash of Tabasco Sauce gives this soup added zip. Serve with seasoned bread crumbs and additional cheese, if desired.
